Flavor: Tart and juicy, with a nice bite typical of summer apples
Approximate Ripening: Early July
Uses: Makes excellent applesauce
Trivia: Imported from Russia by the USDA in 1870
Notes: This thin-skinned apple starts a pale green. As it ripens, the skin color changes to yellow-green and eventually a pale yellow, lending it a look of “transparency.” Yellow Transparent is at its tartest when in its green stage, so look for that coloring if you like a lip-puckering apple.
